His restaurant Marque is the second-highest ranked Australian on the World’s 50 Best Restaurants list, after Peter Gilmore’s Quay. His meteoric career path includes a formative stint with Paris star Alain Passard and earlier forays into more casual Sydney dining. Accolades abound for his exciting, refined and intelligent food. He has three hats in The Sydney Morning Herald Good Food Guide, was named Chef of the Year in 2010 and awarded Restaurant of the Year in 2011. He also won Gourmet Traveller’s Restaurant of the Year in 2012. His first book, Marque: A Culinary Adventure, was published in 2011 and he opened Pei Modern in Melbourne in 2012, to excellent reviews.
