Roberto Petza
In the small Sardinian town of Siddi, Roberto’s restaurant S'Apposentu symbolises his commitment to the traditions and producers of the region. He’s transformed an historic 1900 art Nouveau-style building that was once the home of local pasta baron Puddu into an elegant restaurant; the kitchen in what was once the servants' quarters. Through his selection of produce, menu and his teaching academy he aims to preserve Sardinia’s agricultural and cooking heritage and have traditional practices recognised as an important cultural legacy.
